Cheesecake Cookie Bars

This weekend I made these bars. For years it has been a signature dessert of mine. So many people asking me for the recipe, and time and again I’ve dodged out of giving it to them claiming it as ‘top secret’.

A month ago or so, I don’t honestly remember because I’ve been a pinning slacker lately and have avoided getting sucked into the ultimate internet time suck for weeks now, I saw some recipes much like mine proving that I am not the sweet baking goddess my oven-mitt toting ego likes to pretend to be. *le sigh*

So. Fine. I concede. I will no longer keep my not-so-secret recipe tucked away.

Ingredients

  • cookie dough (you can either by a 32oz tube of your favorite brand and flavor or make a batch from scratch)
  • 8oz cream cheese – softened
  • 1 cup sugar
  • 1 egg

If you’ve bought a tube of cookie dough, use half of it and press it into a 9×13″ pan. You can also adjust, and use a smaller pan, like a 7×11″.
Now would be a good time to preheat your oven to 350 degrees.
Next mix together the cream cheese, egg and sugar. Not just mix it, whip it! You want it as fluffy as you can get it. Hopefully you have a standup mixer so you don’t get tired of holding your handheld. Either way, though, it can be done.
Once you’re faux cheesecake batter is nice and whipped together, pour it over the cookie crust pressed into your pan.
If you have any remaining cookie dough, and haven’t done like I tend to do and pick at it until I’ve pretty much eaten all of the extras, break it up into little chunks and randomly drop it all over the top of the cheesecake mixture.
(I wish I could show you what that looks like in a picture, but when making my latest batch of bars I ate the remaining cookie dough. Don’t judge.)
Bake. It takes about an hour, but once you hit the 45minute mark keep your eye on it.
Once you pull it out, let it cool a bit before cutting into it.

 

 

 

I highly recommend cutting into it while it’s still warm, so you can dish it up with some vanilla ice cream. However, if you slip into a sickening-sweet overload coma I cannot be held liable.

    Yum yum, I think I will be making these tonight. I love a good go to recipe! Mine is peanut butter cookie pie…bad part, one of my kids is allergic to peanuts. So this goes to adult only functions with me. Now I have one I can make with everyone around.

      It’s so easy, too! It’s one of my ‘go to’ desserts when I need to take something to an event.
